The landscape.
It all begins here

Among the mountains of the Sierra de Mariola, our cooking finds its own rhythm.

Casa el tio David was born from a simple way of understanding food: cooking from the land, respecting the produce and letting each season lead the way. Valencian and Alicante tradition is our starting point; creativity is how we keep writing its story.

We do not reinvent for the sake of it; we look for new nuances in recipes that are part of our memory.

Cooking with roots.
The season decides the menu

Our menu changes because the landscape changes too.

Wild mushrooms and truffles when their time comes, slow-cooked stews in winter and lighter dishes in summer. We work with local ingredients and producers who understand the value of time.

Every dish is born from a recipe, a memory or a product from our surroundings. Cooking that seeks balance between Mediterranean tradition and a contemporary outlook, without excess or artifice.

The table.
The pleasure of enjoying

A welcoming space designed to be enjoyed without hurry.

Every visit is different, but they all share one idea: making our guests feel at home. An intimate setting where food, wine and conversation find their time.

A gourmet
experience

Food, wine and spirits pairing.

Each dish finds its match in a selection of wines and spirits chosen for affinity and balance.

A cellar designed to converse with the kitchen, enhance every dish and turn the meal into an unhurried, complete experience.

The sobremesa.
When the meal gives way
to conversation

Our desserts are an expression of our signature cuisine, where creativity and innovation are always present.

We make ice creams and sweets with a fine-dining approach, taking care of every detail to round off the experience. We also give special importance to the sobremesa, with a selection of petit fours to accompany the final moments at the table.

Finca La Mícola®. Our single-estate EVOO

At 710 metres above sea level, among centuries-old olive trees in the Sierra de Mariola Natural Park, our Extra Virgin Olive Oil is born.

Finca La Mícola® is a limited production that expresses the character of the landscape it comes from. A careful extraction process preserves the identity of each harvest, resulting in an intense oil, full of character and nuance, that reflects the richness of this inland Alicante land.
